Peanut Butter Chocolate Chip Snowball Cookies

Ingredients:

1 cup unsalted butter, softened

1/2 cup creamy peanut butter

1/2 cup powdered sugar plus extra for coating

1 teaspoon vanilla extract

2 1/4 cups all-purpose flour

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

1/4 cup mini marshmallow bits optional, for garnish

Instructions:

Preheat Oven:

Preheat your oven to 350F 175C and line a baking sheet with parchment paper.

Prepare the Dough:

In a large mixing bowl, cream together the softened butter, peanut butter, and powdered sugar until light and fluffy.


Mix in the vanilla extract.

Gradually add the flour and salt, mixing until a soft dough forms.

Fold in the chocolate chips.

Shape the Cookies:

Scoop about 1 tablespoon of dough and roll it into a ball. Place the dough balls on the prepared baking sheet, about 1 inch apart.

Bake:

Bake for 10-12 minutes or until the edges are lightly golden. Be careful not to overbake as these cookies are meant to stay soft and tender.

Cool and Coat:

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Once cooled, roll each cookie generously in powdered sugar.

Garnish:

Sprinkle mini marshmallow bits or extra powdered sugar over the cookies for a festive touch.

Serve:

Arrange on a platter and enjoy these soft, melt-in-your-mouth treats!
