Peach Cobbler Cheesecake Bars
With a buttery crust, creamy peach cheesecake filling, and crumbly topping, these Peach Cobbler Cheesecake Bars are a delicious and unique dessert. Serves 12.
Ingredients
For the Crust:
2 cups all-purpose flour
1/2 cup powdered sugar
1/2 tsp ground cinnamon
1 cup unsalted butter, softened 杻
For the Filling:
3 peaches, pitted, peeled, and thinly sliced
12 oz cream cheese, softened 燎
3/4 cup granulated sugar
3 large eggs 讀
1 tsp vanilla extract
For the Topping:
1 1/2 cups all-purpose flour
1/4 cup light brown sugar, packed
1/4 cup granulated sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg optional
1/4 tsp fine sea salt 蓼
1/2 cup unsalted butter, melted 杻
Instructions
1 Preheat oven to 350F 175C. Line a 9×13-inch baking dish with foil and spray with cooking spray; set aside.
2 Crust: In a large bowl, mix flour, powdered sugar, and cinnamon. Slice in the softened butter and use a pastry cutter to combine until it forms a crumbly dough. Press this into the bottom of the baking dish and bake for 20 minutes, until set. Set aside to cool slightly.
3 Layer the Peaches: Spread the sliced peaches over the crust.
4 Filling: In a large bowl, beat the cream cheese until smooth, then mix in the sugar until combined. Add the eggs one at a time, mixing well after each, and then mix in the vanilla. Pour this mixture over the peaches.
5 Topping: In a large bowl, mix flour, brown sugar, granulated sugar, cinnamon, nutmeg, and salt. Add the melted butter and stir with a fork to create a crumbly texture. Sprinkle this over the cheesecake layer.
6 Bake for 45-55 minutes, until the top is golden brown and the cheesecake is set with a slight jiggle in the center. Cool completely on the countertop, then refrigerate until fully set.
