Pantry Curried Quinoa with Garbanzo Beans and Roasted Peppers
Ingredients:
1 cup quinoa, rinsed1 can 15 oz garbanzo beans, drained and rinsed1 red bell pepper, roasted and diced1/2 yellow onion, diced1 tbsp curry powder1/2 tsp cumin1/2 tsp paprika2 tbsp olive oil1 tbsp lemon juiceSalt and pepper to tasteFresh cilantro for garnish optional
Instructions:
Cook the quinoa according to package instructions.While the quinoa cooks, heat olive oil in a pan over medium heat. Add diced onion and cook until soft, about 3 minutes.Add the garbanzo beans, roasted red pepper, curry powder, cumin, paprika, salt, and pepper. Stir to combine and cook for 5 minutes.Add the cooked quinoa to the pan and mix well. Drizzle with lemon juice and toss to combine.Garnish with fresh cilantro and serve warm.
