Orange Creamsicle Cake

Ingredients:

For the Cake:

1 box of yellow cake mix

1 box of instant vanilla pudding mix

4 large eggs

1/2 cup vegetable oil

1 cup orange juice

1/4 cup orange zest about 2 large oranges

For the Frosting:

8 oz cream cheese, softened

1/4 cup unsalted butter, softened

1 tsp vanilla extract

4 cups powdered sugar


2 tbsp orange juice

1 tbsp orange zest for garnish

Directions:

Preheat the oven to 350F 175C. Grease and flour two 9-inch round cake pans or line with parchment paper.

In a large bowl, combine the cake mix, vanilla pudding mix, eggs, vegetable oil, orange juice, and orange zest. Mix well until smooth.

Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

While the cakes cool, prepare the frosting. In a large bowl, beat the cream cheese and butter together until smooth and creamy.

Gradually add the powdered sugar, 1 cup at a time, mixing well after each addition. Add the orange juice and vanilla extract and beat until smooth and fluffy.

Once the cakes are completely cool, spread a layer of frosting on the top of one cake. Place the second cake on top and frost the entire cake.

Garnish with orange zest for a fresh, vibrant finish. Slice and serve!
