No-Bake Oreo Peppermint Cheesecake Bites
Ingredients:
20 Oreo cookies, crushed reserve a few tablespoons for topping
4 tbsp unsalted butter, melted
8 oz cream cheese, softened
1/2 cup powdered sugar
1/2 tsp peppermint extract
1/2 cup whipped topping or whipped cream
1/2 cup crushed peppermint candies or candy canes
Optional:
White chocolate, melted, for drizzling
Instructions:
Prepare the Crust:
In a bowl, mix the crushed Oreos minus the reserved amount with melted butter until well combined.
Press a spoonful of the mixture into the bottoms of mini cupcake liners or silicone molds to form a firm crust.
Make the Filling:
In a medium bowl, beat the softened cream cheese until smooth.
Add powdered sugar and peppermint extract, and mix until creamy and well blended.
Fold in the Whipped Topping:
Gently fold in the whipped topping and crushed peppermint candies until evenly distributed throughout the mixture.
Assemble the Cheesecake Bites:
Spoon the cream cheese mixture over each Oreo crust, filling to the top.
Add Toppings:
Sprinkle the reserved crushed Oreos and extra crushed peppermint candies on top.
Drizzle with melted white chocolate, if desired, for an extra festive touch.
Chill:
Refrigerate the bites for at least 2 hours or until firm.
Serve:
Remove from the liners and serve chilled. Enjoy the refreshing, creamy, and minty flavors!
