Mini Twix Cheesecakes

These Mini Twix Cheesecakes combine the irresistible flavors of rich cheesecake, chocolate, caramel, and the crunch of Twix candy bars. Perfect for parties or indulging in a decadent treat, these bite-sized desserts will be hard to resist!

Ingredients:

For the Crust:

1 cups graham cracker crumbs

6 tablespoons butter, melted 杻

For the Cheesecake:

16 oz cream cheese, softened 燎

2/3 cup granulated sugar

2 tablespoons flour

1 teaspoon vanilla extract

cup caramel sauce


cup heavy whipping cream 拏

For the Ganache/Topping:

cup semi-sweet chocolate

cup heavy whipping cream 拏

Instructions:

Crust: 1 Preheat oven to 350F 175C. Pulse about 12 graham crackers in a food processor until you have 1 cups of crumbs. 2 Add melted butter and pulse until combined. Divide the crust mixture evenly among the cupcake molds, pressing down gently to form the base about 1 tablespoon per mold. Set aside. 杻

Cheesecake Filling: 1 In a stand mixer with a paddle attachment, or using a hand mixer, cream the softened cream cheese for 2-3 minutes until smooth and lump-free. 燎 2 Add sugar and flour, mixing until well combined. 3 Pour in vanilla extract and caramel sauce, mixing until smooth. 4 With the mixer on low, add heavy whipping cream. Once combined, increase the speed to high for 1 minute. 拏 5 Add eggs, one at a time, and mix just until combined be careful not to overmix. 讀 6 Divide the cheesecake batter evenly among the molds, filling each one nearly to the top. Bake for 13-15 minutes, or until the center jiggles slightly. Watch closely to avoid overbaking or cracking. 7 Cool completely on a wire rack, then refrigerate for at least 3 hours, or overnight, to set.

Topping: 1 Once the cheesecakes have set, drizzle with salted caramel sauce. Place them back in the fridge while preparing the ganache. 2 In a microwave-safe bowl, heat chocolate and heavy whipping cream for 30-45 seconds. Let sit for 2-3 minutes, then whisk until smooth. Allow to cool for about 5 minutes. 3 Top each cheesecake with about 1 tablespoon of ganache, then garnish with whipped cream and a mini Twix candy bar. 4 Refrigerate until ready to serve.
