Ingredients

For the Popovers:

14 teaspoons 4 tablespoons Salted butter divided

1 1/2 cups Whole milk, at room temperature

3 large Eggs, at room temperature

1 tablespoon Salted butter, melted

1 teaspoon Vanilla extract

1 1/2 cups All-purpose flour

1 teaspoon Kosher salt

1/3 cup Granulated sugar

2-3 teaspoons Lemon zest

1/4 teaspoon Vanilla bean powder optional

For the Jammy Strawberries:

2 cups Strawberries, sliced

1 tablespoon Granulated sugar

2 tablespoons Strawberry jam

1 tablespoon St. Germain elderflower liquor optional

Instructions

1. Preheat & Prepare the Muffin Pan:


Position an oven rack in the lower third of the oven and preheat it to 450F 232C.

Place 1 teaspoon of butter into each cup of a 12-cup standard muffin pan.

Transfer the pan to the oven for 3-5 minutes to melt the butter and heat the pan.

2. Make the Popover Batter:

In a medium bowl, whisk together the milk and eggs vigorously until frothy, about 1 minute.

Add the 1 tablespoon melted butter, vanilla extract, flour, and salt, and whisk until just combined. Small lumps are okay.

3. Bake the Popovers:

Carefully remove the hot pan from the oven and swirl the melted butter around to evenly coat each cup.

Divide the batter evenly among the muffin cups, filling each about 3/4 full.
