Marshmallow Caramel Corn
Ingredients:
12 cups popped popcorn about 1/2 cup unpopped kernels
1/2 cup unsalted butter
1 cup packed brown sugar
1/4 cup light corn syrup
1/4 teaspoon salt
1 teaspoon vanilla extract
4 cups mini marshmallows
Directions:
Prepare the Popcorn:
Place the popped popcorn in a large mixing bowl, ensuring all unpopped kernels are removed. Set aside.
Make the Caramel Sauce:
In a medium saucepan over medium heat, melt the butter.
Stir in the brown sugar, corn syrup, and salt. Bring the mixture to a boil, stirring continuously.
Once boiling, let it cook without stirring for 4-5 minutes.
Remove from heat and stir in the vanilla extract.
Add Marshmallows:
Add the mini marshmallows to the caramel mixture. Stir until they are completely melted and the mixture is smooth.
Combine with Popcorn:
Pour the marshmallow caramel sauce over the popcorn. Gently toss to ensure all popcorn is evenly coated.
Cool and Serve:
Spread the coated popcorn onto a baking sheet lined with parchment paper.
Allow it to cool and set for about 20 minutes before serving.
