Luscious Strawberry Sugar Cookies
Ingredients:
For the cookies:
2 cups all-purpose flour
1 teaspoon baking powder
teaspoon baking soda
teaspoon salt
1 cup unsalted butter, softened
1 cups granulated sugar
1 large egg
1 teaspoon vanilla extract
teaspoon almond extract optional, for extra flavor
cup fresh strawberries, finely chopped pat dry with a paper towel
For the sugar coating:
cup granulated sugar
1 teaspoon freeze-dried strawberry powder optional, for extra color and flavor
Directions:
Prepare the dough: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
Cream the butter and sugar: In a large mixing bowl, beat the butter and sugar together until light and fluffy about 2-3 minutes. Add the egg, vanilla extract, and almond extract, then mix until smooth.
Incorporate the dry ingredients: Gradually add the flour mixture to the wet ingredients, mixing until just combined. Gently fold in the finely chopped strawberries, being careful not to overmix.
Chill the dough: Cover the dough and refrigerate for at least 30 minutes. This helps prevent spreading during baking.
Preheat and prepare: Preheat the oven to 350F 175C and line a baking sheet with parchment paper.
Coat the cookies: In a small bowl, mix the sugar and freeze-dried strawberry powder if using. Scoop tablespoon-sized portions of dough, roll into balls, and coat them in the sugar mixture.
Bake: Place the cookie dough balls on the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are set and slightly golden. The centers will remain soft.
Cool and enjoy: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy with a glass of milk or a cup of tea!
