Luscious Moist Fruitcake
Ingredients:
1 cup unsalted butter, softened
1 cup brown sugar
4 large eggs
1/2 cup orange juice
1 tablespoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
2 cups mixed dried fruits e.g., raisins, currants, apricots
1 cup nuts e.g., walnuts, pecans, chopped
Directions:
Preheat the Oven:
Preheat your oven to 325F 163C. Grease a loaf pan and line it with parchment paper for easy removal.
Prepare the Wet Ingredients:
In a large bowl, cream the softened butter and brown sugar together until fluffy. Add the eggs one at a time, beating well after each addition. Mix in the orange juice and vanilla extract until smooth.
Prepare the Dry Ingredients:
In a separate bowl, whisk together the flour, baking powder, ground cinnamon, ground nutmeg, and salt.
Combine Wet and Dry Mixtures:

Cool:
