Lollipop Twist Recipe

Ingredients:
2 cups granulated sugar
cup light corn syrup
cup water
teaspoon cream of tartar optional, for smoother texture
teaspoon flavor extract e.g., vanilla, lemon, or peppermint
Food coloring your choice of colors
Lollipop sticks
Parchment paper or silicone mat
Instructions:
Prepare Your Workspace:
Line a baking sheet with parchment paper or a silicone mat.
Arrange the lollipop sticks spaced apart on the prepared surface.
Make the Candy Mixture:
In a medium saucepan, combine the sugar, corn syrup, water, and cream of tartar if using.
Heat over medium-high heat, stirring until the sugar dissolves.
Once dissolved, stop stirring and let the mixture boil until it reaches 300F 149C on a candy thermometer the “”hard crack”” stage.
Add Flavor and Color:
Remove the saucepan from heat.
Stir in the flavor extract and a few drops of food coloring. For multiple colors, divide the mixture into separate batches before adding different colors.
Create the Lollipops:
Quickly pour the candy mixture onto the prepared surface, forming small circles around the lollipop sticks.
For a twist effect: If using multiple colors, drizzle one color over another and use a toothpick to gently swirl them together.
Allow the lollipops to cool and harden completely, about 30 minutes.
Wrap and Store:
Once hardened, carefully remove the lollipops from the parchment or silicone mat.
Wrap in clear plastic or cellophane and secure with a twist tie or ribbon.
