Lemon Herb Chicken Thighs with Green Beans

Ingredients:

4 bone-in, skin-on chicken thighs

2 tbsp olive oil

2 tbsp unsalted butter

2 garlic cloves, minced

Juice of 1 lemon

1 tsp dried thyme

1 tsp dried rosemary

Salt and black pepper to taste


1 cup fresh green beans, trimmed

Lemon slices and fresh parsley for garnish

Instructions:

1. Preheat oven to 375F 190C.

2. Heat olive oil in a large oven-safe skillet over medium heat. Season chicken thighs with salt, pepper, thyme, and rosemary.

3. Place chicken thighs skin-side down in the skillet and sear for 5-6 minutes until golden brown. Flip and cook for another 3 minutes.

4. Remove chicken from the skillet and set aside. In the same skillet, melt butter and sauté garlic until fragrant.

5. Add lemon juice and green beans, stirring to coat them in the sauce. Place the chicken back into the skillet on top of the green beans.

6. Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is cooked through and the green beans are tender.

7. Garnish with lemon slices and parsley before serving.
