Lebkuchen German Spice Cookies

Ingredients:

1 cups all-purpose flour

1 tsp baking powder

1 tsp ground cinnamon

tsp ground nutmeg

tsp ground ginger

tsp ground allspice

1 cup honey

cup granulated sugar

1 large egg

1 tbsp lemon zest

1 tsp vanilla extract

1 cups ground almonds

cup candied orange peel, finely chopped

Directions:

Prepare the Dry Ingredients:

In a medium bowl, whisk together the flour, baking powder, cinnamon, cloves, nutmeg, ginger, and allspice. Set aside.


Heat the Honey Mixture:

In a saucepan over low heat, warm the honey and sugar, stirring until the sugar completely dissolves. Remove from heat and let it cool slightly.

Combine Wet and Dry Ingredients:

In a large bowl, beat the egg. Gradually mix in the cooled honey mixture, followed by the lemon zest and vanilla extract. Slowly incorporate the dry ingredients, then fold in the ground almonds and candied orange peel until a cohesive dough forms.

Chill the Dough:

Cover the dough with plastic wrap and refrigerate for 24 hours to allow the flavors to fully develop.

Preheat the Oven:

Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart. Gently flatten each ball with your hand.

Bake:

Bake for 12-15 minutes, or until the cookies are golden and firm to the touch. Allow them to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Optional Glaze:

For an extra touch of sweetness, drizzle or brush the cooled cookies with a simple icing made by mixing powdered sugar with a little water until smooth.
