Lasagna Stuffed Zucchini Boats

Ingredients:

1 lb ground chicken

1 red bell pepper, diced

24 oz marinara sauce

8 oz ricotta cheese

1 1/2 cups spinach, chopped


4 garlic cloves, minced

1 egg, 2 tbsp parsley, 4 zucchinis, 8 oz mozzarella, 1/4 cup Parmesan

Instructions:

Preheat to 375F. Cook chicken, add pepper, sauce.

Mix ricotta, spinach, garlic, egg, salt, pepper.

Scoop zucchinis, fill with meat, ricotta, mozzarella, and sauce. Top with Parmesan.

Bake 35 mins.
