Juicy Pineapple Heaven Cake
Ingredients:
1 box yellow cake mix
1 can 20 oz crushed pineapple in juice do not drain
1/2 cup vegetable oil
3 large eggs
1 package 3.4 oz instant vanilla pudding mix
1 container 8 oz whipped topping like Cool Whip, thawed
1/2 cup crushed pineapple optional, for topping
Toasted coconut flakes optional garnish
Directions:
Preheat oven to 350F 175C. Grease a 9×13-inch baking dish.
In a large mixing bowl, combine cake mix, crushed pineapple with juice, oil, eggs, and pudding mix.
Beat with an electric mixer for 2 minutes until well combined and smooth.
Pour batter into the prepared dish and smooth the top.
Bake for 3035 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool completely in the pan.
Once cooled, spread the whipped topping evenly over the cake.
Optionally, top with additional crushed pineapple and sprinkle with toasted coconut flakes.
Chill for at least 1 hour before serving for best flavor and texture.
