Jelly Roll Topped Cheesecake

Ingredients

For the Cheesecake:

2 cups graham cracker crumbs

cup unsalted butter, melted

2 tbsp granulated sugar

4 8 oz packages cream cheese, softened

1 cup granulated sugar

cup sour cream

4 large eggs

1 tsp vanilla extract

1 tbsp lemon juice optional

For the Jelly Roll Cake:

3 large eggs

1 cup granulated sugar

cup water

1 tsp vanilla extract

1 cup all-purpose flour

1 tsp baking powder

tsp salt

cup strawberry or raspberry jam

For the Topping:

Whipped cream for garnish


Icing drizzle 1 cup powdered sugar 2 tbsp milk

Extra jam optional

Directions

1 Prepare the Cheesecake:

Preheat the oven to 325F 160C and grease a 9-inch springform pan.

In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of the pan to form the crust.

In a large mixing bowl, beat softened cream cheese until smooth. Add sugar, sour cream, vanilla, and lemon juice. Mix well until combined.

Add eggs one at a time, mixing gently after each addition to avoid overmixing.

Pour the cheesecake batter over the crust and bake for 50-60 minutes or until set. Let it cool in the oven with the door cracked for 1 hour, then chill in the fridge for at least 4 hours or overnight.

2 Prepare the Jelly Roll Cake:

Preheat the oven to 375F 190C and line a 10×15-inch jelly roll pan with parchment paper.

In a large bowl, beat the eggs for about 5 minutes until frothy and pale. Gradually add sugar, then water, and vanilla. Continue beating until smooth.

Sift together the flour, baking powder, and salt. Gently fold into the egg mixture, being careful not to deflate the batter.

Spread the batter evenly in the prepared pan and bake for 12-15 minutes or until lightly golden.

Once baked, roll the warm cake in a towel dusted with powdered sugar. Allow it to cool completely, then unroll the cake and spread jam on top. Re-roll the cake tightly.

3 Assemble the Cheesecake:

Once the cheesecake has fully chilled, remove it from the springform pan.

Slice the jelly roll cake into 1-inch slices and arrange the slices on top of the cheesecake.

Drizzle the icing powdered sugar mixed with milk over the jelly roll slices and garnish with whipped cream.

Optional: Add extra jam for a more pronounced fruity topping.
