Italian Christmas Cookies
Ingredients:
2 cups all-purpose flour
1/2 cup sugar
1/2 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 teaspoons baking powder
1/4 teaspoon salt
1 cup powdered sugar
2-3 tablespoons milk
Sprinkles for decoration
Instructions:
Preheat the oven to 175C 350F. Line a baking sheet with parchment paper to prevent sticking.
In a large bowl, cream the butter and sugar together until the mixture is light and fluffy. This step is crucial for achieving the perfect texture.
Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla and almond extracts to infuse the traditional flavors.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Do not overmix the dough.
Roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet. Gently flatten each ball with the bottom of a glass.
Bake the cookies for 10-12 minutes, or until the edges are lightly golden. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
In a small bowl, mix the powdered sugar and milk until smooth. Dip the tops of the cooled cookies in the glaze and decorate with sprinkles. Allow the glaze to set before serving.
