For the Crust:

2 cups graham cracker crumbs

1/4 cup brown sugar

1/2 cup unsalted butter, melted

For the Cheesecake Filling:

3 8 oz packages cream cheese, softened

1 cup granulated sugar

1/4 cup brown sugar

3 large eggs

1/2 cup sour cream

1/4 cup heavy cream

1 tsp vanilla extract

1/2 tsp ground cinnamon

1/4 tsp nutmeg

For the Honey Glaze:

1/2 cup honey

1/4 cup unsalted butter

1/4 cup powdered sugar

1/2 tsp vanilla extract

For the Crumble Topping:

1/2 cup flour

1/4 cup brown sugar

1/4 cup unsalted butter, melted

1/2 tsp cinnamon

Instructions


Step 1: Prepare the Crust

Preheat your oven to 325F 163C. Grease a 9-inch springform pan and line the bottom with parchment paper.

In a bowl, mix graham cracker crumbs, brown sugar, and melted butter until evenly combined.

Press the mixture into the bottom of the prepared pan. Bake for 810 minutes, then set aside to cool.

Step 2: Make the Cheesecake Filling

In a large mixing bowl, beat cream cheese until smooth.

Add granulated sugar and brown sugar, and mix until well combined.

Beat in eggs, one at a time, followed by sour cream, heavy cream, vanilla extract, cinnamon, and nutmeg. Mix until smooth.

Pour the filling over the crust in the springform pan. Smooth the top.

Step 3: Bake the Cheesecake

Wrap the outside of the springform pan with aluminum foil to prevent leaks. Place the pan in a larger roasting pan and fill the roasting pan with hot water halfway up the sides of the springform pan.

Bake for 6070 minutes, or until the edges are set and the center is slightly jiggly.

Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour. Then chill in the refrigerator for at least 4 hours or overnight.

Step 4: Prepare the Honey Glaze

In a small saucepan over medium heat, combine honey, butter, and powdered sugar. Stir until smooth and slightly thickened. Remove from heat and stir in vanilla extract. Let cool slightly.

Step 5: Make the Crumble Topping

In a bowl, mix flour, brown sugar, melted butter, and cinnamon until crumbly.

Step 6: Assemble and Serve

Remove the cheesecake from the springform pan and transfer to a serving plate.

Drizzle the honey glaze over the top, allowing it to drip down the sides.

Sprinkle the crumble topping around the edges and on top.

Slice and serve!
