– 1 bay leaf
– 4 cups mixed beans e.g., kidney beans, black beans
– 1 medium onion, diced
– 2 carrots, chopped
– 2 celery stalks, chopped
– 2 cloves garlic, minced
– Salt and pepper, to taste
Instructions:
1. Begin by heating the olive oil in a large pot over medium heat. Once hot, add the diced onion, chopped carrots, and celery. Sauté for about 5-7 minutes, until the vegetables soften and the onion becomes translucent.
2. Stir in the minced garlic and cook for an additional minute, ensuring it doesnt burn.
3. Add the mixed beans to the pot, followed by the diced tomatoes, shredded chicken or turkey, thyme, bay leaf, and vegetable broth. Stir everything together to combine.
