Grilled Corn Salad
Ingredients:
4 ears of corn, grilled and kernels removed1 cup cherry tomatoes, halved1/2 cup red onion, finely diced1/2 cup fresh cilantro, chopped1 jalapeño, finely chopped optional2 tbsp olive oil1 tbsp lime juiceSalt and pepper to taste
Instructions:
Grill the corn until slightly charred, then let cool and cut kernels off the cob.In a large bowl, combine grilled corn, cherry tomatoes, red onion, cilantro, and jalapeño if using.Drizzle with olive oil and lime juice, then season with salt and pepper.Toss to combine and serve chilled or at room temperature.
