Grilled Cheese & Mushroom Sandwich
Ingredients:
For the Sandwich:
4 slices of brioche or sourdough bread
1 cup sliced mushrooms button or cremini
2 tbsp unsalted butter for cooking
2 tbsp olive oil
4 slices of mozzarella or Gruyère cheese
2 tbsp parsley, chopped optional
For Butter Spread:
2 tbsp unsalted butter, softened
1/2 tsp garlic powder
1/4 tsp dried thyme optional

Instructions:
1. Prepare the Mushrooms:
Heat olive oil and 1 tbsp butter in a skillet over medium heat.
Add sliced mushrooms and sauté for 5-7 minutes until golden brown. Set aside.
2. Prepare the Butter Spread:
In a small bowl, mix softened butter with garlic powder and thyme.
3. Assemble the Sandwich:
Spread the garlic butter on one side of each bread slice.
On the unbuttered side, layer cheese slices and sautéed mushrooms.
Top with another slice of bread buttered side out.
4. Grill the Sandwich:
Heat a non-stick skillet or griddle over medium-low heat.
Place the sandwich on the skillet and cook for 3-4 minutes per side, pressing gently with a spatula, until the bread is golden and the cheese is melted.
5. Serve:
Garnish with chopped parsley for extra flavor.
