Gooey Pumpkin Crumble Cake
Ingredients:
1 box yellow cake mix reserve 1 cup for topping
1 egg
1/2 cup butter, melted
1 15 oz can pumpkin puree
1 14 oz can sweetened condensed milk
2 eggs
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/4 cup brown sugar
1/2 cup butter, melted for topping
1 cup reserved cake mix
1/2 cup chopped pecans optional
Directions:
Preheat Oven:
Preheat your oven to 350F 175C. Grease a 9×13 inch baking dish.
Make the Crust:
In a large bowl, mix the cake mix reserving 1 cup, 1 egg, and 1/2 cup melted butter. Press this mixture firmly into the bottom of the prepared baking dish.
Prepare the Pumpkin Layer:
In a separate bowl, whisk together the pumpkin puree, sweetened condensed milk, 2 eggs, cinnamon, nutmeg, and ginger until smooth. Pour the pumpkin mixture evenly over the crust.
Make the Crumble Topping:
In a small bowl, combine the reserved 1 cup of cake mix, brown sugar, 1/2 cup melted butter, and chopped pecans if using. Sprinkle this crumble mixture evenly over the pumpkin layer.
Bake:
Bake for 45-50 minutes, or until the center is set and the topping is golden brown.
Cool and Serve:
Allow the cake to cool completely before cutting into squares for serving.
