Gooey Coffee Caramel Pecan Cake
Ingredients:
For the Cake:
– 1 18-ounce box yellow cake mix plus ingredients listed on the box: eggs, oil, water
– 1 cup sour cream
– 1 teaspoon vanilla extract
– 1/2 teaspoon ground cinnamon
For the Caramel Pecan Filling:
– 1/4 cup unsalted butter
– 1/4 cup brown sugar, packed
– 1 cup pecans, chopped
– 20 soft caramels, unwrapped
– 1/4 cup heavy cream
– 1 tablespoon bourbon optional
For the Topping:
– 1/4 cup unsalted butter, melted
– 1/4 cup brown sugar, packed
– 1/2 cup chopped pecans
– 1 teaspoon ground cinnamon
Directions:
1. Preheat the Oven and Prepare the Pan:
Preheat your oven to 350F 175C. Grease and flour a 9×13-inch baking dish.
2. Prepare the Cake Batter:
In a large bowl, prepare the yellow cake mix according to package instructions. Add the sour cream, vanilla extract, and cinnamon to the batter, mixing until smooth and combined.
3. Make the Caramel Pecan Filling:
In a small saucepan, melt 1/4 cup butter and stir in 1/4 cup brown sugar until smooth. Add the chopped pecans and cook for 1 minute. In a separate small saucepan, melt the caramels with heavy cream over low heat, stirring until smooth. Stir in the bourbon optional.
4. Layer the Cake:
Pour half of the cake batter into the prepared baking dish. Spread the pecan mixture over the batter, then drizzle the caramel mixture over the pecans. Pour the remaining cake batter on top, spreading it evenly.
5. Add the Topping:
In a small bowl, combine the melted butter, 1/4 cup brown sugar, chopped pecans, and cinnamon. Sprinkle this mixture over the top of the cake batter.
6. Bake the Cake:
Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool for 15 minutes in the pan before slicing.
7. Serve:
Slice the cake and enjoy the gooey, caramel-laden layers with a cup of coffee for a perfect indulgent treat!
