Ingredients:
– 2 boneless, skinless chicken breasts, cut into cubes
– 2 ribeye steaks, cut into cubes
– cup shredded mozzarella cheese
– 4 cloves garlic, minced
– cup sour cream
– cup heavy cream
– 1 cup shredded cheddar cheese
– cup grated Parmesan cheese
– 3 green onions, sliced green parts only
– 1 teaspoon Italian seasoning
– teaspoon salt
– teaspoon black pepper
– 2 tablespoons olive oil
– 4 large russet potatoes, peeled and cubed
– Fresh parsley, chopped for garnish
Instructions:
1. Start with the cheesy loaded mashed potatoes:
– Put the cubed russet potatoes in a large pot and cover with salted water. Bring to a boil and let them cook until theyre fork-tender, which should take about 15-20 minutes.
– Once cooked, drain the potatoes thoroughly.
– Return the potatoes back to the pot and use a potato masher to mash them until they reach a smooth consistency.
– Mix in the heavy cream, sour cream, shredded cheddar cheese, shredded mozzarella cheese, and sliced green onions. Dont forget to season with salt and pepper to your liking.
– Preheat your oven to 375F 190C. Transfer the creamy mashed potatoes into a greased baking dish, smoothing them out evenly across the surface.
– Bake them in the oven for 20-25 minutes, or until you see a golden top and the cheese is nicely bubbly.
2. Now, lets cook the garlic Parmesan chicken and steak:
– Take a large bowl and combine the cubed chicken and steak. Start by adding minced garlic, grated Parmesan cheese, Italian seasoning, salt, and black pepper.
– Toss everything together until the meat is thoroughly coated with the garlic and cheese mixture.
– In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken and steak cubes in a single layer.
– Let them sear undisturbed for about 4-5 minutes on each side, ensuring they get that lovely golden-brown color and are cooked through.
