Garlic-Parmesan Chicken & Melt-in-Your-Mouth Scalloped Potatoes
Ingredients:
4 boneless, skinless chicken breasts
2 tbsp olive oil
1/4 cup grated Parmesan cheese
2 tbsp garlic powder
Salt and pepper to taste
4 medium potatoes, thinly sliced
1 cup shredded cheddar cheese
1/2 cup heavy cream
1/2 cup milk
2 tbsp butter
Directions:
Preheat the oven to 375F 190C. Season chicken breasts with garlic powder, Parmesan, salt, and pepper.
Heat olive oil in a skillet over medium heat. Cook the chicken for 5-7 minutes on each side until browned and cooked through. Set aside.
In a baking dish, layer sliced potatoes. In a bowl, mix heavy cream, milk, butter, salt, and pepper. Pour over the potatoes and top with shredded cheddar cheese.
Bake for 40 minutes until the potatoes are tender and the cheese is golden. Serve the chicken with the cheesy scalloped potatoes.
