Garlic Parmesan Chicken Meatloaf
Ingredients:
1 lbs ground chicken
cup grated Parmesan cheese
cup breadcrumbs panko or regular
2 cloves garlic, minced
1 small onion, finely diced
1 egg
cup milk
1 tablespoon Italian seasoning
1 teaspoon salt
teaspoon black pepper
2 tablespoons fresh parsley, chopped optional
cup grated mozzarella optional topping
1 tablespoon olive oil
Directions:
Preheat oven to 375F 190C. Line a baking sheet with parchment paper or lightly grease a loaf pan.
In a large mixing bowl, combine ground chicken, Parmesan, breadcrumbs, garlic, onion, egg, milk, Italian seasoning, salt, pepper, and parsley. Mix until just combineddo not overmix.
Shape the mixture into a loaf and place on the prepared baking sheet or in the loaf pan.
Drizzle olive oil over the top of the meatloaf to help it brown.
Bake for 45-50 minutes, or until the internal temperature reaches 165F 75C.
If using mozzarella, sprinkle on top during the last 5 minutes of baking and allow it to melt.
Let the meatloaf rest for 5 minutes before slicing. Serve with your favorite sides.
