Garlic Parmesan Chicken and Potatoes
Ingredients:
4 boneless, skinless chicken thighs or breasts
1.5 lbs baby potatoes, halved
4 tablespoons olive oil, divided
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon smoked paprika
Salt and pepper to taste
2 tablespoons fresh parsley, chopped
Optional: fresh lemon wedges for serving
Directions:
Preheat oven to 400F 200C. Line a baking sheet with parchment paper or lightly grease it.
In a large bowl, toss halved baby potatoes with 2 tablespoons olive oil, half the garlic, salt, pepper, 1/4 cup Parmesan, and Italian seasoning. Spread on one side of the baking sheet.
Pat chicken dry and season with salt, pepper, paprika, and remaining garlic. Drizzle with 2 tablespoons olive oil and press remaining Parmesan onto each piece. Place next to the potatoes on the baking sheet.
Bake for 3035 minutes or until the chicken is golden and cooked through, and the potatoes are crisp-tender. Optional: broil for 23 minutes for extra crispiness.
Garnish with chopped parsley and serve with lemon wedges if desired.
