Garlic Herb Butter Steak with Roasted Potatoes

Ingredients:

For the Steak:

2 ribeye or sirloin steaks

Salt and pepper, to taste

2 tablespoons olive oil

2 tablespoons unsalted butter

For the Garlic Herb Butter:

4 tablespoons unsalted butter, softened

1 clove garlic, minced

1 tablespoon fresh parsley, chopped

1 teaspoon fresh thyme, chopped

1 teaspoon lemon zest

Pinch of salt

For the Roasted Potatoes:

1 pound baby potatoes, halved

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika


Salt and pepper, to taste

Fresh parsley for garnish

Instructions:

1 Prepare the Garlic Herb Butter:

In a small bowl, mix softened butter, minced garlic, parsley, thyme, lemon zest, and a pinch of salt. Roll into a log using plastic wrap and refrigerate until firm.

2 Cook the Potatoes:

Preheat oven to 400F 200C.

Toss baby potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread evenly on a baking sheet.

Roast for 25-30 minutes or until golden and tender, flipping halfway through.

3 Cook the Steak:

Season steaks generously with salt and pepper on both sides.

Heat olive oil in a skillet over medium-high heat. Add steaks and sear for 3-4 minutes per side for medium-rare adjust to your preference.

Add butter to the skillet during the last minute of cooking, spooning it over the steaks for added flavor.

Remove steaks from the skillet and let rest for 5 minutes.

4 Assemble and Serve:

Top each steak with slices of garlic herb butter.

Serve alongside the roasted potatoes, garnished with fresh parsley.
