Garlic Butter Steak Bites & Cheesy Smashed Potatoes
Ingredients:
For the Garlic Butter Steak Bites:
1 lb ribeye or sirloin steak, cut into bite-sized cubes
2 tablespoons olive oil
3 cloves garlic, minced
2 tablespoons butter
1 teaspoon fresh rosemary or thyme, chopped
Salt and black pepper to taste
For the Cheesy Smashed Potatoes:
1 lb baby potatoes, halved
2 tablespoons olive oil
Salt and black pepper to taste
cup shredded cheddar cheese
cup sour cream
2 tablespoons butter
2 tablespoons fresh chives, chopped
Directions:
Prepare the potatoes: Boil the baby potatoes in a large pot of salted water for 15-20 minutes or until fork-tender. Drain and set aside.
Smash the potatoes: Using the back of a spoon or a potato masher, gently smash the potatoes on a baking sheet, keeping them in individual pieces.
Season and bake the potatoes: Drizzle olive oil over the smashed potatoes and sprinkle with salt and black pepper. Bake at 400F 200C for 20 minutes, or until the edges are crispy.
Cook the steak bites: While the potatoes are baking, heat olive oil in a large skillet over medium-high heat. Add the steak bites and cook for 4-5 minutes, or until browned on all sides and cooked to your preferred doneness.
Make garlic butter sauce: Add garlic, butter, and rosemary or thyme to the pan with the steak bites. Stir to coat and cook for an additional 1-2 minutes until fragrant.
Assemble: Remove the potatoes from the oven and top with shredded cheddar cheese and a dollop of sour cream. Garnish with fresh chives. Serve the garlic butter steak bites alongside the cheesy smashed potatoes.
