Funnel Cake Bites
Ingredients:
For the batter:
1 1/4 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon cinnamon optional, for a hint of spice
1 tablespoon granulated sugar
1 egg
1 cup whole milk or a non-dairy substitute like almond milk
1/2 teaspoon vanilla extract
For frying:
2 cups vegetable oil or enough for 2-3 inches of depth in your pot
For topping:
1/2 cup powdered sugar
Optional: chocolate sauce, caramel, or berry compote for dipping
Directions:
Mix the dry ingredients: In a medium bowl, whisk together the flour, salt, baking powder, cinnamon, and sugar. Set aside.
Prepare the wet ingredients: In a separate bowl, beat the egg, then whisk in the milk and vanilla extract.
Combine the batter: Gradually pour the wet ingredients into the dry mixture, whisking until smooth. The batter should be thick but pourable.
Heat the oil: In a deep, heavy-bottomed pot or skillet, heat the oil to 350F 175C. Use a thermometer for accuracy to avoid undercooking or burning.
Cook the bites: Use a spoon or a small cookie scoop to drop the batter into the hot oil, one tablespoon at a time. Fry 5-6 bites at a time to prevent overcrowding. Cook each bite for about 1-2 minutes per side, or until golden brown.
Drain and cool: Remove the bites with a slotted spoon and place them on a plate lined with paper towels to absorb excess oil.
Dust with powdered sugar: Once the bites are slightly cooled, generously dust them with powdered sugar. Serve immediately with your favorite dipping sauces if desired.
