18 Oreo cookies 200g, with filling

3 tablespoons melted butter 42g

For the Filling:

4 large eggs

1 cup granulated sugar 200g

1 teaspoon pure vanilla extract 5ml

1/2 teaspoon espresso powder optional

6 ounces unsweetened chocolate or extra dark chocolate 85% chocolate, finely chopped 170g

1/2 cup unsalted butter 113g

1 cup heavy whipping cream 237ml

For the Topping:

1 cup heavy whipping cream 237ml

1 tablespoon powdered sugar

Chocolate curls for topping

Instructions

Step 1: Preheat the Oven

1 Preheat your oven to 350F 175C. Spray a 9-inch deep pie dish with cooking spray or brush lightly with melted butter.

Step 2: Make the Crust

2 Place Oreo cookies in the bowl of a food processor and pulse until finely ground.

3 Add the melted butter and pulse until moistened.

4 Press the mixture evenly into the bottom and up the sides of the prepared pie dish.


5 Bake for 10-15 minutes, or until fragrant and set. Transfer to a wire rack and let cool completely.

Step 3: Make the Filling

6 Combine the chopped chocolate and butter in a heatproof bowl set over a saucepan with 1 inch of simmering water. Stir until melted and smooth alternatively, melt it in the microwave, stirring every 20 seconds. Set aside to cool.

9 Remove the bowl from heat and place it on a tea towel. Beat the egg mixture on high speed while gradually adding the remaining 1/2 cup of sugar. Continue beating until very pale, thick, and tripled in volume ribbon stage, about 3-5 minutes.

Add the cooled chocolate mixture and vanilla extract, whisking gently until incorporated. Let it cool for about 30 minutes, stirring occasionally, until its not warm but not solidified.

Step 4: Whip the Cream

1 In a clean bowl, pour the heavy whipping cream and beat on medium speed until it thickens. Increase the speed and beat until it forms soft peaks.

2 Gently fold the whipped cream into the chocolate mixture in 2-3 stages until no white streaks remain. Pour this luscious mixture into the cooled crust.

Step 5: Chill the Pie

1 Place the pie in the fridge and let it set for at least 4 hours or up to 24 hours.

Step 6: Make the Topping

1 In a clean bowl, pour the heavy whipping cream and beat on medium speed until thickened.

2 Sift in the powdered sugar and beat until soft peaks form.

3 Spoon the whipped cream on top of the chilled pie and garnish with dark chocolate curls.
