Forgotten Chicken and Rice

Ingredients:

4 boneless, skinless chicken breasts

1 cup long-grain white rice uncooked

1 can 10.5 oz cream of mushroom soup

1 can 10.5 oz cream of chicken soup

2 cups chicken broth

1/2 cup sour cream

1 packet 1 oz dry onion soup mix

1/2 tsp garlic powder

1/2 tsp paprika optional, for color

1/4 tsp black pepper


Chopped fresh parsley for garnish

Directions:

Preheat your oven to 350F 175C. Lightly grease a 9×13-inch baking dish.

In a large mixing bowl, combine the uncooked rice, cream of mushroom soup, cream of chicken soup, chicken broth, sour cream, garlic powder, and black pepper. Mix well until smooth.

Pour the rice mixture into the prepared baking dish, spreading it evenly.

Place the chicken breasts on top of the rice mixture, pressing them down slightly. Sprinkle the dry onion soup mix evenly over the chicken and rice. For added color, sprinkle with paprika if desired.

Cover the dish tightly with aluminum foil to ensure the steam cooks the rice.

Bake in the preheated oven for 1 hour and 30 minutes. After baking, remove the foil and let it sit for 5-10 minutes before serving. Garnish with fresh parsley for a pop of color.
