Ingredients
For the Crust:
12 graham crackers, crushed into fine crumbs
2 tablespoons brown sugar
cup butter, melted

2 cups cold milk
1 package 3.4 ounces instant vanilla pudding mix
1 teaspoon mint extract or to taste
Green food coloring a few drops, until the desired shade is achieved
1 cup whipped topping plus extra for garnish
For Garnish:
Additional whipped cream

Instructions
Prepare the Crust:
In a medium bowl, combine the graham cracker crumbs and brown sugar.
Pour in the melted butter and mix until the crumbs are evenly moistened.
Press the mixture firmly into the bottom and sides of a 9-inch pie pan to form a crust.
Place the crust in the refrigerator to chill while you prepare the filling.

In a large mixing bowl, whisk together the cold milk and vanilla pudding mix until smooth and thickened, about 2-3 minutes.
Stir in the mint extract and a few drops of green food coloring, mixing until the filling reaches a uniform color.
