Easy Melt-and-Mix Chocolate Mud Cake

Ingredients:

For the Cake:

200g dark chocolate, chopped

250g unsalted butter, cubed

1 1/2 cups caster sugar

3 large eggs

1 cup plain flour

1/4 cup cocoa powder

1/2 cup milk

For the Ganache Topping:

200g dark chocolate, chopped

1/2 cup heavy cream

Directions:

Preheat and Prepare:

Preheat your oven to 320F 160C. Grease and line a 9-inch round cake pan with parchment paper to ensure easy removal.

Melt the Base Ingredients:

In a heatproof bowl, place the chopped dark chocolate, butter, and sugar. Set the bowl over a pot of simmering water making sure the bowl doesnt touch the water. Stir until everything is melted and smooth. Remove from heat and let cool slightly.


Add Eggs:

Whisk the eggs into the cooled chocolate mixture until fully combined.

Incorporate Dry Ingredients:

Sift the plain flour and cocoa powder together. Gently fold the dry ingredients into the wet mixture in batches, alternating with the milk. Stir until the batter is smooth and lump-free.

Bake the Cake:

Pour the batter into the prepared pan. Smooth the top with a spatula and bake for 1 hour, or until a toothpick inserted into the center comes out with a few moist crumbs. Let the cake cool completely in the pan before removing.

Prepare the Ganache:

Heat the heavy cream in a small saucepan over medium heat until steaming but not boiling. Pour the hot cream over the chopped dark chocolate in a bowl. Let it sit for 2-3 minutes, then stir until the mixture is smooth and glossy.

Frost the Cake:

Once the cake has cooled, spread the ganache evenly over the top. Allow the ganache to set for a few minutes before slicing.

Serve:

Slice and enjoy this indulgent treat with a side of whipped cream, fresh berries, or just on its own!
