Easy Enchilada Casserole
Ingredients:
1 lb ground beef or chicken1 can 10 oz enchilada sauce1 can 4 oz diced green chilies6-8 corn tortillas, cut into strips2 cups shredded cheddar cheese1 cup sour cream1 small onion, chopped1/2 tsp cumin1/2 tsp chili powderSalt and pepper to taste
Instructions:
Preheat oven to 350F 175C.In a skillet, cook ground beef or chicken with chopped onion until browned. Drain excess fat.Stir in enchilada sauce, green chilies, cumin, chili powder, salt, and pepper. Simmer for 5 minutes.In a greased 9×13-inch baking dish, layer tortillas, followed by the meat mixture, sour cream, and cheese. Repeat layers.Bake for 20-25 minutes, until bubbly and cheese is melted.
