3 tablespoons cold water

6 ounces white chocolate coarsely chopped

1 tablespoon granulated sugar

8 ounces semi-sweet chocolate coarsely chopped

Instructions:

1. Prepare the Chocolate Cake:

Preheat your oven to 350F 175C.

Line a 9-inch cake pan with a parchment round and coat it with baking spray.


In a large bowl, combine flour, sugar, cocoa powder, baking soda, salt, and baking powder. Mix well.

Create a well in the center and add eggs, milk, melted butter, and vanilla extract. Stir to combine.

Gradually add boiling water and whisk until smooth.

Pour the batter into the prepared pan and bake for 28-30 minutes, or until a toothpick inserted comes out clean.

Pour the cream mixture over the white chocolate, whisking until smooth. Let it cool to room temperature.

Whip the remaining heavy cream and sugar until soft peaks form 2-4 minutes.

Gently fold the whipped cream into the white chocolate mixture until fully combined.

Carefully spread the white chocolate mousse over the set dark chocolate mousse layer.

Refrigerate for 3 hours or overnight to set.

4. Make the Chocolate Ganache:

Place semi-sweet chocolate in a glass or metal bowl.

In a saucepan, bring heavy cream to a simmer. Pour over the chopped chocolate and let it sit for 1 minute.

Stir until smooth and let the ganache cool for 10 minutes, allowing it to thicken slightly.

Pour the ganache over the white chocolate mousse layer, smoothing it to the edges and letting it drip down the sides.
