Ingredients:

6 large eggs

cup mayonnaise

1 teaspoon Dijon mustard

1 teaspoon white vinegar or apple cider vinegar

teaspoon salt

teaspoon black pepper

teaspoon smoked paprika plus extra for garnish

1 teaspoon finely chopped chives optional

1 teaspoon sweet relish optional, for a touch of sweetness

Directions:

Boil the Eggs:

Place eggs in a saucepan and cover with cold water.

Bring to a boil, then remove from heat and let sit for 10-12 minutes.


Transfer eggs to an ice bath and let cool for 5 minutes.

Peel the eggs and slice them in half lengthwise.

Make the Filling:

Carefully remove the yolks and place them in a bowl.

Mash yolks with a fork and mix in mayonnaise, Dijon mustard, vinegar, salt, pepper, and smoked paprika.

Stir until smooth and creamy. For an extra-smooth texture, use a food processor.

Taste and adjust seasoning if needed.

Fill & Garnish:

Spoon or pipe the filling back into the egg whites.
