Crispy Buttered Bread with Melted Cheese & Tender Brisket
Ingredients:
For the Brisket:
1 lb cooked brisket, sliced or shredded
cup barbecue sauce optional
1 tablespoon butter
For the Sandwiches:
8 slices sourdough or rye bread
4 tablespoons unsalted butter, softened
8 slices cheddar cheese or preferred cheese
4 slices provolone cheese
1 small red onion, thinly sliced
cup pickled jalapeños optional
Directions:
Heat a skillet over medium heat and melt 1 tablespoon of butter. Add the brisket and barbecue sauce if using, stirring to coat. Cook for 2-3 minutes until warmed through. Set aside.
Butter one side of each bread slice. Place 4 slices, buttered side down, on a clean surface.
Layer each with 1 slice of cheddar cheese, a generous portion of brisket, red onions, pickled jalapeños if using, 1 slice of provolone cheese, and another slice of cheddar.
Top with the remaining bread slices, buttered side up.
Heat a large skillet or griddle over medium-low heat. Cook each sandwich for 3-4 minutes per side, pressing gently with a spatula, until the bread is golden brown and crispy, and the cheese is fully melted.
Remove from heat, let cool slightly, then slice and serve hot.
