Creamy Parmesan Italian Sausage Soup
Ingredients:
1 pound Italian sausage, casings removed
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
4 cups chicken broth
1 can 14.5 oz diced tomatoes
1 cup heavy cream
1 cup grated Parmesan cheese
2 cups baby spinach
1 teaspoon Italian seasoning
Salt and pepper, to taste
Instructions:
Cook the Sausage: In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon. Drain any excess fat if necessary.
Sauté Aromatics: Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent, about 3-4 minutes.
Add Broth and Tomatoes: Pour in the chicken broth and diced tomatoes. Bring the mixture to a gentle simmer.
Add Cream and Parmesan: Stir in the heavy cream, grated Parmesan cheese, and Italian seasoning. Simmer for about 10 minutes, stirring occasionally, to allow flavors to meld.
Add Spinach: Stir in the baby spinach and cook until it wilts, about 2 minutes.
Season and Serve: Taste and season with salt and pepper as needed. Serve hot with crusty or garlic bread for a comforting meal.
Notes: For a thicker consistency, mix 1 tablespoon of cornstarch with 1 tablespoon of water, then stir it into the soup.
