Creamy Bay Scallop Spaghetti
A luxurious, creamy pasta dish with sweet bay scallopsperfect for a special dinner or to treat yourself!
Ingredients:
8 oz spaghetti
寧 1 lb bay scallops, patted dry
龍 3 cloves garlic, minced
杻 2 tbsp butter
1/4 cup fresh parsley, chopped
1/2 cup heavy cream
蓼 Salt and pepper to taste
Juice of 1 lemon
燎 1/2 cup grated parmesan cheese
2 tbsp olive oil
Directions:
1 Cook spaghetti according to package instructions. Drain, reserving 1 cup of pasta water.
2 In a large skillet, heat olive oil and butter over medium heat. Add scallops and cook for 2-3 minutes on each side until golden and cooked through. Remove scallops and set aside.
3 In the same skillet, add garlic and cook for 1-2 minutes until fragrant.
4 Stir in heavy cream, salt, pepper, and lemon juice. Let the sauce simmer for 3-4 minutes until it thickens.
5 Add cooked pasta, scallops, and parsley to the skillet, tossing to coat the pasta in the creamy sauce. Add reserved pasta water if needed to reach your desired consistency.
6 Serve immediately, topped with grated parmesan.
