Creamy Alfredo Lasagna Soup
Ingredients
1 tbsp olive oil 㮝
1 small onion, diced 暈
3 cloves garlic, minced 龍
1 lb Italian sausage mild or hot
5 cups chicken or vegetable broth 北
1 can 14 oz crushed tomatoes
1 cups heavy cream
1 cup grated parmesan cheese 燎
8 lasagna noodles, broken into pieces
1 tsp dried Italian seasoning
Salt and pepper, to taste 蓼
Fresh parsley or basil, for garnish
Instructions
1 Sauté Aromatics:
Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 34 minutes. Stir in minced garlic and cook for another minute.
2 Cook the Sausage:
Add Italian sausage to the pot, breaking it apart as it cooks. Cook until browned and fully cooked through.
3 Add Broth and Tomatoes:
Pour in the chicken or vegetable broth and add the crushed tomatoes. Stir to combine and bring the mixture to a simmer.
4 Cook the Noodles:
Add broken lasagna noodles to the pot and cook for about 810 minutes or until the noodles are tender.
5 Make It Creamy:
Stir in heavy cream and grated parmesan cheese until the soup becomes rich and creamy. Season with Italian seasoning, salt, and pepper to taste.
6 Serve:
Ladle the soup into bowls and garnish with fresh parsley or basil. Add extra parmesan cheese if desired.
