CRANBERRY ORANGE SHORTBREAD COOKIES
Ingredients:
1 cup unsalted butter, softened
1/2 cup powdered sugar
2 cups all-purpose flour
1/4 tsp salt
1/2 cup dried cranberries, chopped
Zest of 1 orange
1 tbsp fresh orange juice
1/2 tsp vanilla extract
Instructions:
Preheat the oven to 350F 175C .
In a large mixing bowl, beat the softened butter and powdered sugar until creamy
Add the flour and salt, and mix until a dough forms.
Fold in the chopped cranberries, orange zest, orange juice, and vanilla extract .
Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
Flatten each ball slightly with a fork or your fingers.
Bake for 12-15 minutes, until the edges are lightly browned.
