Cranberry and Pistachio Nougat
Indulge in this delightful Cranberry and Pistachio Nougat, a classic confection that combines the tartness of cranberries with the rich flavor of pistachios, perfect for festive occasions.
Ingredients:
3 sheets edible rice paper
cup glucose syrup
cup honey
2 cups caster sugar
1 egg white
Pink food coloring optional
cup pistachio kernels, toasted
1 cups blanched almonds, toasted
cup dried cranberries
Directions:
Prepare the Pan:
Grease a 19cm base square cake pan.
Line the base and sides with baking paper, allowing a 2cm overhang on all sides.
Line the base with 1 sheets of rice paper, trimming to fit.
Make the Sugar Syrup:
Place the glucose syrup, honey, caster sugar, and cup hot water in a heavy-based saucepan over low heat.
Cook, stirring, for 10 minutes or until the sugar has dissolved, brushing down the side of the pan with water to remove sugar crystals.
Place a candy thermometer in the pan ensure it doesnt touch the base.
Increase heat to medium and bring to a boil.
Boil without stirring for 12 to 15 minutes or until the mixture reaches 150C on the thermometer.
Remove the pan from heat.
Whip the Egg White:
Using an electric mixer, beat the egg white in a large, heatproof bowl until soft peaks form.
Gradually add the hot syrup in a steady stream, beating to combine.
If desired, tint the mixture pink with food coloring.
Combine and Set:
Working quickly, fold through the toasted pistachios, almonds, and dried cranberries.
Spoon the mixture into the prepared pan.
Using a wet spatula, smooth the top, pressing down firmly.
Top with the remaining rice paper, trimming to fit, and press down firmly.
Stand at room temperature until set.
Lift from the pan and cut into squares to serve.
Tips:
Thermometer Care: After use, place the thermometer in boiling water so it slowly comes to room temperature; avoid rinsing under cold water to prevent cracking.
Rice Paper: Edible rice paper can be found in larger supermarkets, delis, or specialty food stores.
