Ingredients:
– 4 boneless, skinless chicken breasts
– 2 cups buttermilk
– 2 cups all-purpose flour
– 1 teaspoon paprika
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1/2 teaspoon cayenne pepper optional
– Salt and pepper to taste
– 2 cups vegetable oil for frying
Directions:
1. Marinate the Chicken:
In a large bowl, pour the buttermilk over the chicken breasts. Cover and refrigerate for at least 1 hour, or overnight for the best flavor and tenderness.
2. Prepare the Seasoned Flour:
In a shallow dish, combine the flour, paprika, garlic powder, onion powder, cayenne pepper if using, salt, and pepper. Stir well to ensure the spices are evenly distributed.
3. Coat the Chicken:
Remove the chicken from the buttermilk, allowing the excess to drip off. Dredge each chicken breast in the seasoned flour, pressing lightly to ensure an even coating. Set aside on a plate for a few minutes to allow the coating to adhere better.
4. Heat the Oil:
In a large skillet or cast-iron pan, heat the vegetable oil over medium-high heat until it reaches 350F 175C. The oil should be hot enough to fry but not smoking.
5. Fry the Chicken:
Carefully place the chicken breasts into the hot oil. Fry for about 6-8 minutes on each side, or until golden brown and the internal temperature reaches 165F 75C. Adjust the heat as necessary to prevent burning.
6. Drain and Serve:
Once cooked, remove the chicken from the oil and drain on a paper towel-lined plate. Serve the crispy Southern fried chicken hot with your favorite sides, such as mashed potatoes, coleslaw, or biscuits.
