Cowboy cookies are filled with nuts, chocolate chips, and coconut flakes. This recipe has been pared down from Laura Bushs famous cowboy cookie recipe to make 1 dozen cookies.

Ingredients:

1/2 cup 1 stick unsalted butter, softened 杻

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg 讀

1/2 teaspoon vanilla extract

1 cup all-purpose flour

1/2 teaspoon baking soda 籠

1/4 teaspoon salt 蓼

1/2 cup old-fashioned rolled oats not quick-cooking oatmeal 北

1/2 cup semisweet chocolate chips

1/4 cup chopped nuts e.g., pecans or walnuts 樂


1/4 cup sweetened shredded coconut 便

Instructions:

Preheat your oven to 350F 175C. Line a baking sheet with parchment paper.

In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

Add the egg and vanilla extract, and mix until well combined.

In a separate bowl, whisk together the flour, baking soda, and salt.

Gradually add the dry ingredients to the wet mixture, mixing until just combined.

Stir in the rolled oats, chocolate chips, chopped nuts, and shredded coconut. The dough will be thick and chunky.

Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them a couple of inches apart.

Bake in the preheated oven for about 11-13 minutes or until the edges are golden brown, but the centers are still soft. Keep a close eye on them to avoid over-baking.

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
