Cotton Candy Cupcakes
These whimsical Cotton Candy Cupcakes are as sweet and fun as a day at the fair! With fluffy layers of pink and blue cake, cotton candy-flavored frosting, and a pop of color, theyre a guaranteed crowd-pleaser for kids and adults alike.
Ingredients
For the Cupcakes:
1 box white cake mix
4 egg whites
cup vegetable oil
1 cup water
1 tbsp cotton candy flavoring
Pink and blue food coloring
For the Cotton Candy Frosting:
cup unsalted butter, softened
tsp vanilla extract
1-1.5 tsp cotton candy flavoring
cup heavy whipping cream or milk
3-4 cups confectioners sugar
For Garnish:
Blue and pink sanding sugar
Blue and pink cotton candy
Popsicle sticks
Instructions
1. Prepare the Cupcakes:
Preheat your oven to 350F 175C and line a cupcake pan with paper liners.
In a large bowl, combine the white cake mix, egg whites, vegetable oil, water, and cotton candy flavoring. Mix until smooth.
Divide the batter evenly into two bowls.
Tint one bowl of batter with pink food coloring and the other with blue food coloring, stirring until the colors are vibrant.
Spoon alternating layers of the pink and blue batters into the cupcake liners, filling each about 2/3 full.
Use a toothpick to gently swirl the colors for a marbled effect optional.
Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely.
2. Make the Cotton Candy Frosting:
In a large bowl, beat the softened butter with a mixer until creamy.
Add the vanilla extract and cotton candy flavoring, mixing well.
Gradually add the confectioners sugar, 1 cup at a time, alternating with the heavy whipping cream. Beat until the frosting is light and fluffy. Adjust consistency with more cream or sugar as needed.
3. Frost the Cupcakes:
Divide the frosting into two bowls and tint one with pink food coloring and the other with blue food coloring.
Fill a piping bag fitted with a star tip with both colors, placing them side by side for a swirled effect.
Pipe the frosting onto the cooled cupcakes.
4. Garnish:
Sprinkle pink and blue sanding sugar over the frosting.
Add a tuft of cotton candy on top of each cupcake.
Insert a popsicle stick into the cotton candy for a playful finishing touch.
