Costco Tuxedo Cake Recipe

Treat your taste buds to an unforgettable chocolate experience with this decadent Tuxedo Cake. Layers of rich chocolate cake, smooth mousse, and luscious ganache will make any occasion feel special!

Ingredients:

1 cups 220g all-purpose flour

2 large eggs

1 cups 300g granulated sugar

1 cup 240ml buttermilk

cup 120ml vegetable oil

1 cup 240ml hot coffee or hot water

cup 50g granulated sugar for dark mousse

cup 90g unsweetened cocoa powder

tsp baking powder

tsp salt

1 cup 175g dark chocolate chips

cup 120ml heavy cream for ganache

1 cup 175g white chocolate chips

1 cups 360ml heavy whipping cream, divided

cup 50g granulated sugar for white mousse


1 tsp baking soda

Optional: Chocolate shavings, curls, or sprinkles for garnish

Instructions:

1. Preheat your oven to 350F 175C. Grease and line two 9-inch round cake pans with parchment paper.

2. In a mixing bowl, whisk together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt.

3. In another large bowl, beat together the eggs, granulated sugar, and vegetable oil until the mixture is smooth and well combined. Stir in the buttermilk and vanilla extract until fully incorporated.

4. Gradually fold the dry ingredients into the wet mixture, stirring just until combined. Finally, add the hot coffee, and mix gently. The batter will be thin.

5. Divide the batter evenly between the prepared cake pans and bake in the preheated oven for 30-35 minutes. Once done, let the cakes cool completely in the pans.

6. For the white chocolate mousse, melt the white chocolate chips with cup of heavy cream in a microwave-safe bowl. Stir until smooth and allow it to cool slightly. In a separate bowl, whip the remaining 1 cup of heavy cream with cup of granulated sugar until soft peaks form. Gently fold the whipped cream into the cooled white chocolate mixture.

7. For the dark chocolate mousse, melt the dark chocolate chips with cup of heavy cream in a microwave-safe bowl, stirring until smooth. Allow it to cool slightly. In another bowl, whip the remaining 1 cup of heavy cream with the other cup of granulated sugar until soft peaks form. Carefully fold the whipped cream into the cooled dark chocolate mixture.

8. To assemble the cake, place one layer of chocolate cake on a serving plate. Spread the white chocolate mousse evenly on top. Place the second cake layer on top of that and spread the dark chocolate mousse evenly over it.

9. For the ganache, heat cup of heavy cream in a small saucepan until it simmers. Pour it over the 1 cup of dark chocolate chips in a bowl, stirring until the mixture is smooth and glossy. Pour the ganache over the top of the cake, allowing it to drip down the sides.

10. Refrigerate the completed cake for at least 2 hours to set the mousse and ganache layers. Garnish with chocolate shavings or curls if desired before serving.
