Classic Homestyle Meatloaf with Buttery Mashed Potatoes

Ingredients:

For the Meatloaf:

2 lbs ground beef

1 cup breadcrumbs

1/2 cup milk

2 large eggs

1 small onion, finely diced

2 cloves garlic, minced

1/4 cup ketchup

2 tbsp Worcestershire sauce

1 tsp salt

1/2 tsp black pepper

1 tsp dried parsley

Topping:

1/3 cup ketchup

2 tbsp brown sugar

1 tsp yellow mustard


For the Mashed Potatoes:

2 lbs Yukon gold potatoes, peeled and quartered

1/2 cup unsalted butter

3/4 cup whole milk warm

Salt and pepper to taste

Optional: Chopped chives or parsley for garnish

Directions:

Preheat oven to 375F 190C.

In a large bowl, mix all meatloaf ingredients until well combined avoid overmixing.

Shape the meat mixture into a loaf and place it in a baking dish.

In a small bowl, mix ketchup, brown sugar, and mustard. Spread evenly over the meatloaf.

Bake uncovered for 5560 minutes, or until internal temperature reaches 160F 71C. Let rest 10 minutes before slicing.

While meatloaf bakes, boil potatoes in salted water for 1520 minutes or until fork-tender.

Drain and return potatoes to the pot. Add butter and gradually mix in warm milk until smooth and creamy. Season with salt and pepper to taste.

Serve thick slices of meatloaf alongside fluffy mashed potatoes, garnished if desired.
