Classic Fudge
Ingredients:
4 cups white sugar
1 cup water
250 g margarine
1 can condensed milk 14 oz
Instructions:
Prepare the Mixture: In a large pot, melt the margarine, sugar, and water over low heat until the margarine is fully melted.
Boil the Mixture: Increase the heat to bring the mixture to a boil and let it boil without stirring for 6 minutes.
Add Condensed Milk: Reduce the heat to low, add the condensed milk, and stir continuously until the mixture turns a rich caramel color, about 20-25 minutes. You can test readiness by dropping a small amount into cold water; if it sets, its done.
Set the Fudge: Pour the hot fudge mixture into a buttered baking sheet. Allow it to cool slightly, then cut into squares while still warm.
Fudge Tips:
For Toffee-Like Fudge: Return the fudge to the pot with 1/2 cup of water. Bring to a boil and cook for another 20 minutes, stirring constantly.
If Fudge is Crumbly or Overcooked: Add 1 cup of water, return the fudge to the pot, and reboil, stirring constantly for 20 minutes until smooth.
For Extra Flavor: Add 1 teaspoon 5 ml vanilla essence just before pouring the fudge into the pan.
For Perfectly Straight Blocks: Use a flat, ruler-width plank to guide your cuts for even pieces.
