Christmas Cherry Bars
Ingredients:
For the Bars:
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon salt
1 can 21 ounces cherry pie filling
For the Glaze Optional:
1 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract
Directions:
Prepare the Oven and Pan:
Preheat your oven to 350F 175C. Grease a 9×13-inch baking pan with butter or non-stick spray.
Make the Batter:
In a large bowl, cream together the softened butter and sugar until light and fluffy.
Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the creamed mixture, mixing until well combined.
Assemble the Bars:
Spread 3 cups of the batter evenly into the prepared baking pan.
Carefully spoon the cherry pie filling over the batter, spreading it gently to create an even layer.
Drop the remaining batter in small clumps over the cherry filling.
Bake:
Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean.
Cool:
Let the bars cool completely in the pan on a wire rack.
Optional Glaze:
In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
Drizzle the glaze over the cooled bars. Let the glaze set before cutting into squares or rectangles.
Serve and Enjoy:
Once the glaze is firm, cut the bars into desired portions and serve!
